Pro-Beijing legislator Wong Kwok-hing once suggested that Hong Kong butchers be given a more respectable title to reflect the importance of their trade in the food culture and living traditions of the city.
A Cantonese restaurant in Prince Edward apparently agrees with the lawmaker’s suggestion. It has put up an advertisement looking for a “siu mei specialist”.
The restaurant specializes in siu mei dishes, or cuisine involving roasted pork and chicken you often see hanging in the glass-encased kitchens of such food outlets.
In the advert, it proclaims itself as provider of “traditional, innovative, delicious” siu mei dishes, and as such, it is looking for “talent” who can live up to its high standards.
Accordingly, on top of monitoring the quality of meat cuts and other raw materials for the cuisine, a siu mei specialist should also be able to maintain good relationship with existing clients while dealing with pesky customers.
And because the restaurant’s owner holds a siu mei specialist in high regard, the lucky chef who gets the job need not have to hand out flyers to attract potential customers.
So that’s the job description. Now for the qualifications.
First and foremost, a candidate should have at least a college degree in food and science or above. By “above”, the restaurant presumably means a masteral or doctoral degree.
Applicants must also have at least three years of relevant working “experiment”. You read it right: not so much work experience as an ability to experiment with siu mei.
Perhaps the owner is looking for someone like the chef who came up “siu mei sushi” at Taste supermarket.
Candidates must also have a good knowledge of HACCP, ISO 220000, safety regulations and other relevant ordinances.
Those who can’t meet these requirements need not fret. They may still apply if they know how to “communicate well with married women”.
Besides, the restaurant also have job openings for less experienced people like “siu mei technicians”.
The job advertisement has gone viral on social media, stirring up a lively discussion among netizens.
Some people remarked that the job requirements show that it’s not easy to land a job in Hong Kong without a university degree as even a siu mei chef needs one.
